Spicy Noodle Summer Rolls

Has anyone else found that Tik Tok is the number one place to get all sorts of information, from recipes to hacks or to simply fuel a Harry Potter obsession? I recently came across a video of someone making these rolls and I knew I had to try it. They’re literally a combination of two of my favourite things; summer rolls and spicy noodles! Bare in mind the spice level of the noodles is quite high but you can add less sauce depending on how much you can handle.

Ingredients:

  • 2 x Spicy Ramen cups – Specifically Samyang Hot Chicken Flavour
  • 2 tbsp Mayonnaise
  • 8 Rice paper wraps
  • Shredded carrots
  • Shredded red cabbage
  • Lettuce leaves
  • 2 tbsp sweet chilli sauce – for dipping
  • 1 tsp Sesame seeds
  • Warm water in a bowl

Instructions:

  • Follow the instructions on the noodle packet, you can either use the Samyang ones or another of your choice as long as its not a soupy noodle. For the Samyang noodles I add boiling water for a few minutes then drain properly and add in the sauce. I only ever add 2/3 of the sauce packet and then add a tablespoon of mayonnaise, now you’re probably think what! Trust me on this, you can’t taste the mayo but it tones down the spice level and makes the sauce creamy and delicious. Once the noodles are done set aside to cool.
  • The rice paper wraps need a quick soak in some warm water and by quick I mean literally a few seconds. Then place the wrap on a plate, I find this is the best way to prevent it from sticking and tearing.
  • Assemble the wrap by adding in a piece of lettuce and forkful of noodles, then shredded cabbage & carrots on top. Bring up the bottom of the wrap then both sides and roll until you have a tight summer roll.
  • Garnish with some sesame seeds and serve with sweet chilli sauce.
  • Tip: if you are making them in advance, place the rolls on baking paper so they don’t stick and cover with a damp towel.
