Easy Sprinkle Cake

Hi all, hope everyone is keeping well! Today I’m bringing you a recipe that will take you back to primary school days. Quarantine has bought out the baker in everyone and it’s safe to say that I finally jumped onto that bandwagon.

As of recent, school cake, sprinkle cake or Tottenham cake has been trending, so I succumbed to online influence and made one. The recipe is super simple and easy to follow and most importantly tastes delicious! Believe it or not, I came across it on TikTok, who else is semi addicted to the app?

Ingredients:

  • 300g butter
  • 300g caster sugar
  • 5 large eggs
  • 300g self-rising flour
  • 95ml milk
  • 1 tsp vanilla essence
  • 800g icing sugar
  • 8 tbsp milk
  • Coloured sprinkles

Instructions:

  • Beat butter with caster sugar until the mixture is pale and fluffy. Make sure the butter is at room temperature
  • Beat in eggs – add in one at a time
  • Gradually add flour and mix
  • Mix in the milk and vanilla essence
  • Place in a greased baking tray and pop into the oven for 30 minutes at 160 degrees
  • To ice – mix the icing sugar with milk until the consistency is thick and coats the back of a spoon. I had to make a little bit more icing as there were some see through spots on the cake.
  • Once the cake is out of the oven let it cool before pouring icing over the top
  • Cover with sprinkles
  • Let the icing set a little before cutting and serving

Tip: try not to over beat the mixture once you’ve added the flour to make sure the cake is super fluffy.
